spoonful of honey<\/li>\n<li>a pinch of salt<\/li>\n<li>the grated rind of a lemon<\/li>\n<li>one packet of ammonia for cakes (<strong>NO class=\"siteorigin-widget-tinymce textwidget\">\n\t<p>Sift the flour with the salt.<br \/>\n<strong>Roughly cut the almonds<\/strong>.<br \/>\nBeat the eggs with the sugar and the honey then add them to the flour, add the ammonia dissolved in two tablespoons of warm water and add the almonds.<br \/>\n<strong>Mix with your hands until the mixture is solid and compact. Sprinkle the dough with other flour and divide it into long loaves of about 6 cm in width and 1 cm in height.<\/strong><br \/>\nLine the plate with parchment paper and place the pats well apart. Cook for 15 minutes at 180 \u00b0 in a static oven, or at 160 \u00b0 for 25 minutes in a convection oven.<br \/>\n<strong>Don't worry about the smell of ammonia! It will disappear when the nooks have cooled!<\/strong><br \/>\nIt is used instead of yeast because it gives greater fragrance to dry doughs.<br \/>\nBaked and <strong>FUNDAMENTAL cut the loaves into oblique slices of 1 cm thick, otherwise they are not cantucci!<\/strong><br \/>\nThe name cantuccio comes from \"canto\" or \"corner\", then a piece of bread cut at an angle.<br \/>\nPlace them on the plate, from the side of the cut, and put them back in the oven at 150 \u00b0 for 5\/10 minutes, until lightly browned.
