The “sfratto” of the goyms

The eviction (sfratto) is the typical and delicious Pitigliano sweet of the Jewish tradition.

Typical Christmas cake ... .. but always good!

This 20-30 cm long biscuit, whose shape resembles that of a small stick, tells the story of the integration between two profoundly different cultures, the Maremma and the Jewish one.

The "sfratto" of the goyms (a term that means "those who are not Jews") originates from the history of the Jewish community of Pitigliano which recalls the local custom of beating Jews at the door with a stick, a custom dating back to the 17th century , when the Grand Duke of Tuscany Cosimo II de 'Medici had an edict issued in which he ordered the Jews of the areas of Pitigliano, Sovana, and Sorano to leave their homes and move to the ghetto of Pitigliano.

A century later, the Jews of Pitigliano created this cake to remember the event. In fact, the eviction has an elongated shape, similar to a stick, and contains a filling composed of honey, orange peel, walnuts and nutmeg, which give a sweet taste and an intense aroma.

Ingredients

For pasta:
- Soft wheat flour 400 gr
- Sugar 250 gr
- White wine - half a glass
- Extra virgin olive oil 50 gr
- A pinch of salt

For the stuffing:
- Honey 350 gr
- Shelled walnuts 350 gr
- Orange peel
- nutmeg

Recipe of the Sfratto of Pitigliano

The stuffing

To prepare the filling, heat the honey, taking care to mix it well, then add the previously coarsely chopped walnuts. Carefully mix the honey and nuts until they almost caramelize. After removing the mixture from the heat, add the grated orange peel and nutmeg. Leave the mixture aside to cool.

The pastry

Now you can move on to prepare the dough by mixing the flour with the sugar and a pinch of salt, adding the oil and the wine a little at a time to help you knead better. Roll out with a rolling pin and cut 25/30 cm long strips onto which you will place the filling that has cooled in the meantime; then roll them up and remove the excess dough.
Brush with a little oil and bake at 180 ° for 20/25 minutes.

Serve the cold dessert and cut it into thin slices, accompanying it with good vinsanto.
